Killer Toast

Seems like killer toast is one of the must try recipes among those who wanna bake bread. Trust me, you'll be satisfied with the result.  I first tried the recipe tonight. Verdict - the texture is super soft even though you're neither using bread softener nor bread improver. Actually there are several different type of recipes. Here's the one that I tried.

Ingredients:

160g high protein flour
50g granulated sugar (the original recipe suggests 60g. 50g is still sweet to my taste and the sweetness is just nice for sweet bun)
15g milk powder (perhaps the milk powder also contributes to the sweetness)
6g instant yeast
2 egg yolk + cold fresh milk ( total 160g - I add a little bit water as I don't feel like adding too much milk to the bread. To be honest, I realized that I forgot to add milk to the egg yolk. Not until I've already added the egg yolk into the bread maker. So I'd to assume that each grade B egg yolk weighs 20g. Since there were 2 egg yolks, I had to add 120g of milk +water to make all of them 160g )
30g unsalted butter
2g salt ( 1 g if salted butter is used)


Note: Since my Lebbenstil bread maker is small, the bread didn't have much space to rise. Yet the result was still good and satisfactory. Next time I might use bread maker to prepare the dough and use oven to bake.
